Relish Scotland – Second Helping – Delicious!

relish-launch-2013Each Christmas a rash of cookbooks hit the book shops and supermarket shelves only to fade away in the first few months of the new year or be lost amongst that regimented line of rarely opened volumes filed under ‘must read when I have the time’.

Relish Publications is a publishing house willing to be different and launch a Scotland focused food book that is something of a maverick, a mix of chef profiles and recipes which clearly reflect the chef’s enthusiasm for the fresh regional ingredients of Scotland.

Entitled – Relish Scotland / Second Helpings  – this book was launch earlier this month at Mark Greenaway’s Restaurant on the corner of North Castle Street in the heart of Edinburgh. Featuring a mix of celebrities, newcomers and local favourites this is an exciting platform, not only for the chefs but for the ingredients they showcase and in particular for the very useful list of suppliers at the back of the book.

This is not regular home cooking, these are restaurant dishes but the well presented recipes will guide to a near perfect replication of the real thing … albeit at a much reduced price.

Who couldn’t be tempted with the promise of venison with whisky spiked haggis, creamed leeks and pickled squash. Or what about hand-dived scallops with chicken and black pudding iwth saffron and white onion puree? Simpler dishes include roast Perthshire lamb with red onion marmalade mousse and sea bass with celeriac remoulade, tomato salsa and tapenade. Puddings include whisky and honey roast parsnip brulee with thyme ice cream; coffee and doughnuts with marshmallow foam; and summer strawberry millefeuille.

Priced at the same as one main dish this is value for money and might tempt you to forage the Relish Publications site for more of there food books.
